The Whisky

One cask.

Nothing else in
the bottle

This is not a vatted release or a blended run. The Bourbon Cask Single Malt, Preview Series, is drawn from a single cask matured in our bond store in Bothwell. 190 bottles. When they are gone, this whisky is gone.

A bourbon cask does something specific to a spirit. The heavy toast and char on the inside of the oak pulls flavour from deep within the timber, rounding the edges, softening the entry, extending the finish. That is what has been happening inside our bond store in Bothwell.

Tasting Notes

What the

Cask carried through

01

Toasted Coconut

02

Madagascan Vanilla

03

Honeyed Walnut

04

Silky Toffee

05

Warm Brown Spice

06

Bold Oak

Toasted coconut and Madagascan vanilla flow into honeyed walnut and silky toffee, lifted by warm brown spice and bold oak for a long, aromatic finish.

THE STORY

Made in a heritage flour mill.

Finished by the Highlands.

Clyde Mill Distillery operates out of a heritage-listed 1823 flour mill in Bothwell, at the edge of the Clyde River Valley in Tasmania’s Central Highlands. The mill was built to work with what the land provided. We approach our whisky the same way.

The Highlands do something to a maturing spirit that no other environment in the Southern Hemisphere can replicate. Rapid temperature swings. Dramatic pressure changes. The Roaring Forties driving front after front across the valley, humid then dry, warm mornings and cold by afternoon. This drives the spirit deep into the oak staves, then pulls it back out, season after season, carrying something new each time.

It is not slow ageing. It is active shaping. We decide when to start. The Highlands decide when it’s finished.
