Tawny Finish

Distilled between 2019–2021 at our heritage‑listed 1823 mill in the Tasmanian Highlands, this Preview Series Tawny Finish Single Malt comes from a single cask matured in our cool, high‑altitude Bothwell bond store. Only 275 bottles exist.

Shaped by a rare Dutschke Wines tawny cask from a now‑closed Barossa winery, its deep toast and char draw flavour from within the oak, softening the entry and extending the finish over years of slow Highland maturation.

Intricate and expressive, it layers dried fruit, toasted almonds, caramelised fig and a long, soft brown‑spice finish; the individuality of one cask, unmistakably Tasmanian.

THE STORY

Made in a heritage flour mill.

Finished in a Dutschke Wines tawny cask

Clyde Mill Distillery operates out of a heritage-listed 1823 flour mill in Bothwell, at the edge of the Clyde River Valley in Tasmania’s Central Highlands. The mill was built to work with what the land provided. We approach our whisky the same way.

The Highlands do something to a maturing spirit that no other environment in the Southern Hemisphere can replicate. Rapid temperature swings. Dramatic pressure changes. The Roaring Forties driving front after front across the valley, humid then dry, warm mornings and cold by afternoon. This drives the spirit deep into the oak staves, then pulls it back out, season after season, carrying something new each time.

It is not slow ageing. It is active shaping. We decide when to start. The Highlands decide when it’s finished.
