Join us for an evening with Bill Lark AM, the man widely credited with launching the modern Australian whisky industry. Inspired by Tasmania’s exceptional barley, pure water and ideal climate, Bill asked a simple question: why wasn’t anyone making whisky here? That question led him to help change Australia’s distilling laws and sparked a movement that put Tasmanian whisky on the world stage. This Whisky Week, hear Bill tell that remarkable story at Clyde Mill, in the very highlands that inspired it.
Expect an evening built around history, craft and hospitality: cocktails to start, canapés through the Distillery and Bond Store, a tour that traces the journey from grain to glass, and a two-course dinner from Chef Andy showcasing produce from Nant Estate. Bill will join us as guest speaker, sharing stories from the earliest days of Tasmanian whisky through to now. Guests on the Tasting ticket will also enjoy a flight of three Clyde Mill whisky releases, plus a special Bill Lark selection.
